Did you know that a mango has a flat, oblong seed in the center (usually about 1/2 - 3/4 inch thick)? We think the easiest way to cut around the seed is to slice the mango on both long sides of the flat seed into three pieces. Make cross cut slices in the two pieces left without the seed (being sure not to cut through the skin). Then remove the cubes of mango by cutting along the base of the cross cuts. It might be helpful to turn the mango piece inside out before cutting out the cubes (as shown in the pic below).

Steal the tongs and fire up the grill! Make Dad feel extra special this Father’s Day by making this “can’t go wrong” meal. To start, we suggest handing Dad a refreshing martini with some cheese straws. Tell him to enjoy the US Open while you and the kids prepare the meal. The kids can pitch in and make dessert…chocolate chip pinwheels. Be sure to check out our blog to avoid common grilling pitfalls. Happy Father’s Day!
Appetizer: Cheese Straws

Entree: Tuscan Steaks
Side: Asparagus, Prosciutto, and Melon Salad

Here’s a thoughtful gift idea from Twist Entertaining: Make an “I Love You Jar.” This works great for the younger set. Purchase a mason jar at your local craft store and have your kids decorate the jar with stickers and paint. Ask them to write down reasons they love their Dad on strips of paper. “I love Dad because he plays ponies with me”….”I love Dad because he gives me ice cream when I get hurt”… Dad can reach into the jar, pull a strip of paper and smile throughout the year!

Why should you make regular trips to your farmer’s market?

For starters, the produce is picked fresh and sold that day. You can taste the difference. You’ll find fruits and veggies bred for flavor and not their ability to travel. Working farms also preserve open spaces! Yay!
We suggest asking the local farmers for cooking tips. You might learn a new, simple way to cook an old favorite.
And another noteworthy fact, commercial farmers get only 25 cents of each dollar spent. Farmers at the local market get the whole dollar minus rent. Keep your money in the community, stimulate your local economy, and shop for local, tasty fruits and veggies!

1. Smashing. Pressing down on your meat with the spatula, especially burgers, squeezes the juices right out and dries out the meat. For burgers, make an indent in the center of the patty with your thumb before cooking. This will create a perfectly flat burger.
2. Overcooking, especially chicken. Pound your chicken to an even thickness before cooking so everything cooks evenly. Then cook on the grill for 12 - 14 minutes (flipping once) over medium heat.
3. Impatience. Do not open the lid until it is time to flip. Everytime you open the lid, the temp goes down and cooking time increases.
4. Digging in too soon. Let your meat rest for a few minutes before cutting into it, especially steaks. Steak needs to rest for 5 minutes so the juices won’t drain out when you cut into it.
5. Losing your kebabs. Double skewer items that are not secure on your kebabs (such as shrimp, scallops, veggies, etc.). This will prevent them from turning on the kebab when trying to flip and from falling into the flames.

School’s out for summer and we want to share a great idea from our friends at Twist!
Yeehaw! It’s the last day of school and we must celebrate all of the hard work our kids have put in during the school year and we also want to party it up because summer is officially here. We say burn it up baby, by having a homework burning party!

How it Works: Invite a slew of families over on the last day of school for dinner and a homework burning party. Each child must bring something that they have worked very hard on during the year and they are proud of, but they are so ready to be done with. This can be a report, a notebook from a particularly difficult class, a test, etc. Children will take turns tossing their papers into the fire pit. Encourage each child to say a little something about what made this class or test so hard. Then toss it in the fire and everyone cheers…yeh!! Parents feel free to toss in your own documents as well. For example: the auction or fundraiser that you organized this year or a particular proposal for a client…burn it up and be proud of your hard work and accomplishments. The kids will love to see parents get into the action too. (Note: you may need to check your local ordinances to make sure burning paper outside is legal in your town.)
What to Serve: Anything goes, but we recommend grilled food and here are just a few suggestions:
Grilled Pepperoni Pizza
Grilled Quesadillas
Grilled Chicken Tenders with Blue Cheese Dipping Sauce
Finish your meal off with an old favorite….s’mores.

Are your kids already bored this summer? Discover the fun of baking and decorating cupcakes. Cupcakes can make both kids and adults instantly, magically happy.
My 7 year old daughter loves looking through “Hello, Cupcake!” She created her first delicious masterpiece this week…sunflower cupcakes.

Here’s how she did it:
1. Prepare cupcakes and ice with green icing (dyed with food coloring).
2. Place both large and mini Oreos on top of cupcakes.
3. Dye 1/2 cup of frosting yellow and 1/2 cup of frosting orange. Place both yellow and orange icing in corner of a ziplock bag. Reinforce corner of bag with a few pieces of scotch tape. Cut a little “v” shape out of the corner of the bag.
4. Pipe sunflower petals around Oreos. Repeat process slightly overlapping the first layer.
5. Make ladybugs by placing red skittles on cupcake or flowers. Secure into place with frosting. Pipe little dots on skittles.
While she loved baking and decorating them, she thought the best part was giving them to her friends. She has since chosen several more to create throughout the summer. So go ahead and bake your favorite batch, decorate ‘em, and share.
