  1. Supper Tonight - Texas Steak Chili

    We have lots of yummy chili recipes on our site, but none include chunks of tender steak.  Yesterday morning (yes, you have to touch red meat early in the morning if you want a nice warm dinner when you walk in the door after work- small price to pay, anyway…)  I seared some cubes of steaks and then threw them in the slow cooker with some beans, diced tomatoes, peppers and the secret ingredient:  fajita seasoning.  The fajita seasoning put the Texas in this chili.  You can make your own fajita seasoning or just use a tbsp from a packet (which is what we recommend in the actual recipe).  Just in case you are really watching your sodium, here’s a fajita seasoning recipe:

    2 tsp ground cumin
    1 tsp paparika, onion powder, dried oregano, kosher salt
    1/2 tsp ground coriander, garlic powder and black pepper
    1/4 tsp red pepper flakes, ground ginger and cayenne

     If you are a in a rush and don’t feel dirtying up another dish, skip the step of searing the cubes of steak and just toss it all in that amazing slow cooker.  Here’s the recipe link to this No Stress Texas Steak Chili and a picture:

     


  2. Supper Tonight - Gnocchi with Light Bolognese Sauce

    This yummy, hearty recipe was given to us last year by our good friend, Jessica. And it has quickly become a family favorite. Last night, my son said that this is “almost as good as tacos.”  That’s essentially a 5-star review in my house. You can make the sauce ahead of time - it takes great the next day. Make some Gnocchi with Light Bolognese Sauce for your family tonight!

  5. Supper Tonight - Chicken Lettuce Wraps and Veggie Fried Rice

    We make this all of the time and lots of our friends make it for their families too. It’s easy, fast, healthy, delicious, cheap – am I oohing and aahing enough?  All three of my kids love the chicken lettuce wraps and they even like the veggie fried rice which is packed with edamame. I served it up with some mandarin oranges and hot tea for everyone (decaf!). If you don’t have time to make the veggie fried rice, just have plain rice with some microwaved or boiled edamame on the side (buy a bag of edamame in the frozen section). Sprinkle the edamame with some kosher salt (it makes all the difference).

  6. Supper Tonight - Easy Meatballs and Spaghetti

    The day started off dreary and crazy humid, aka “a bad hair day.” (You know what I’m talking about fellow Richmonders.) What better on a bad hair than good ol’ fashioned comfort food: Easy Meatballs and Spaghetti. Toss and serve a simple salad and your meal is complete. Victims of bad hair days shouldn’t suffer alone. Share with us your bad hair day and (and cure)!!!

  7. How ‘Bout Them Apples?

    Every Fall, we spend one weekend morning picking apples at Carter’s Mountain in Charlottesville, Virginia.  It’s a great family day with hay rides, apple trees, pumpkins, cider, and, my favorite, the warm apple cider donuts (to die for).  Here’s a quick guide to which apples to cook with, bake with, throw in a salad, or just grab for a snack (followed by our favorite apple recipes).

    Delciious apples - sweet but not good for baking.  Best for snacking.

    Granny Smith - tart apple which is great for baking or cooking.

    Golden Delicious - great for snacking or baking, and especially yummy in salads.

    MacIntosh - perfect for pie! 

    Braeburn - sweet and tart (our favorite apple when we go apple picking).  Great for snacking, salads or baking.

    Pink Lady - love it, not only for the cute name, but because it’s tangy, sweet and refreshing - great for cooking or fresh eating.

    If you don’t have time to go apple picking, make sure you choose shiny, firm apples from the grocery store, free of bruises.  Store them in the fridge (they love the cool air).

  9. Supper Tonight - Quickie Quesadillas

    Quesadillas are a sure thing in our house.  They are a great dinner option because you can serve them fully loaded for the adults and pick and choose fillings for those picky eaters in your house.  Tonight I combined Monterey jack, feta, leftover chicken, and green salsa to make a “to die for” quesadilla.  I threw some cilantro on there for my husband.  Next time I might try them without chicken or replace the chicken with black beans, corn, avocado, tomatoes or even a scrambled egg..  btw - my kids liked just the chicken and Monterey jack (with some salsa on the side).

  10. Supper Tonight - Roasted Red Pepper Soup

    We love soup!  Now that it’s football season, I plan on making a soup every Sunday for the game. From bouillons and consommes to puree and bisques, my family likes it all.  This week, we made a super quick and delicious Roasted Red Pepper Soup.  With just 8 ingredients, the prep time is minimal. My kids took a few spoonfuls, smiled and said they liked it, but choose to eat extra ham biscuits instead of soup. My husband, however, loved it and he’s excited to slurp up the leftovers for lunch this week.
