    I love California for their movie stars, wine and, of course, cuisine.  The California twist on these fajitas (jack cheese, avocado and roasted red peppers) didn’t let me down.  So fresh and yummy.  Use a rotisserie chicken or slow cook your own.

    The Thai Beef was delish and as always, super easy to whip up. Ground sirloin (90% lean) is less fatty than ground beef so we typically reach for it when grocery shopping. The coconut rice went perfectly with the beef. The Asian Salad came straight out of a bag (I know, I cheated) and it was topped it off with a few crunchy wontons.

    We love crab chowder! You can throw this recipe together at the last minute and have delicious soup that tastes like it took hours to prepare. (Hint: Perfect for company!) My daughter made this for our family in about 10 - 15 minutes.  A simple tossed salad and warm bread sticks completed our meal.


  5. Supper Tonight - Buffalo Chicken Drumsticks

    Some in my family like it hot, but these were a little too hot for the rest.  The meat was super tender and delish but you definitely needed to chase each bite of sauce with a bite of a biscuit - not great for the carb count.  I just slow cooked the drumsticks in a bottle of Texas Pete wing sauce and a little melted butter.  Next time I will add more butter to lower the heat index.  Any suggestions on a milder sauce would be appreciated.  I had to rinse off the sauce for two of my three kids.  I will definitey try these again though.

  7. Supper Tonight - Pork and Chive Pot Stickers

    My first batch of these guys was a total mess! The darn pot stickers stuck to my pan! They were tasty, but not pretty. I switched to a larger, nonstick pan for the second batch and they turned out much prettier (and just as tasty).

  8. Supper Tonight - Mandarin Chinese Chicken Salad

    I had a girlfriend over for dinner last night and we thoroughly enjoyed this salad - light, easy and delcious!  The side of sesame breadsticks were yummy too.  My kids don’t like their foods touching other food, so I served them the rotisserie chicken, carrots, snap peas, and mandarin oranges all separately (with a side of rice).  I would recommend making your own rotisserie chicken by placing a whole chicken in the slow cooker on high for 4 - 6 hours — you get a lot more meat and a lot less sodium!

    Shocker - more Tex-Mex.  I thought both of these recipes rocked.  The Picadillo Tacos were spicy and even my kids loved the kick.  The Migas Tacos were hearty, but a little less flavorful.  My family thought this one would be perfect for brunch!

    A good Thanksgiving wine should complement your meal without breaking the bank! We asked our friends at J. Emerson Fine Wines & Cheese to recommend some fabulous wines to serve with Thanksgiving Dinner.  After heated debate amongst the staff, they came to a consensus.   Given a price limit of $20/bottle, they “featured a few obvious choices (i.e. California pinot noir), as well as a few selections from some areas that are underrated and offer great quality for the money (i.e. Beaujolais).”  Cheers!
