We love empanadas. They make great apps or they can be a tasty meal when paired with spanish rice and and a salad. These spicy beef empanadas were made using biscuits rather than puff pastry dough. My daughter loved rolling them out and helped me to stuff and crimp them. Delish!

Supper Tonight - Shrimp, Mango and Avocado Tortillas
February 24, 2010 by susanMangoes are DIVINE!! We especially love chopping them up for fresh salsas. You can buy a store bought mango salsa, but fresh is best…and it truly is not that tough. Add these shrimp, mango and avocado tortillas to your menu this week (I even used frozen shrimp right from the grocery store). I cooked this entire meal on my panini press (even the shrimp) but you can use a regular skillet as well.

Supper Tonight - Pork Tenderloin with Jezebel Sauce
February 18, 2010 by susanThis is my family’s favorite pork tenderloin recipe. The sauce is just 3 ingredients which makes it my favorite pork tenderloin recipe. During the winter time, I sear the pork tenderloin in a skillet with olive oil (and sometimes some quartered yukon gold potatoes) over high heat for about 3 - 5 minutes per side. Then I put the entire pork tenderloin and skillet in a 375 degree preheated oven for 25 minutes. Just drizzle the simple sauce on top and you are good to go.

Supper Tonight - Spinach and Egg Souffle
February 16, 2010 by susanWhen Matt’s away, I make this souffle. It is light and delish. If he’s home, I add some chopped bacon or ham which is also yummy. I served it up with some greens topped with grapefruit segments and a sweet balsamic dressing. I felt like I was eating at a spa (I wish I was at a spa). The kids got scrambled eggs and toast but they were happy.
