Holiday Pomegranate and Grapefruit Salad

I made this holiday salad for supper club and I’m going to add it to my Christmas Eve menu too.  The pomegranate seeds are a juice box explosion in your mouth (except they are good for you).  Pomegranates are only in season for about another month, so go get one and try it (as far as I know, you only eat the seeds).  I also added some grapefruit segments, apple, jicama and a light vinaigrette of pom juice, balsamic vinegar and olive oil.  Sweet and delightful!

  

Tip on seeding the pomegranates:  Just score the pomegranate around the center and break it open.  Remove the seeds in a bowl of cold water (they will sink to the bottom) and then remove the white pith that remains on top of the water with a slotted spoon.
