This recipe was crazy easy and flavorful. Everything cooks right inside the parchment paper and there is no chopping. I like to cut my parchment paper into giant hearts (the kids can help with this) so it closes easily. If you are not in the mood for a little arts and crafts, just use foil. My kids don’t love Mediterranean ingredients so I just wrapped chicken breasts seasoned with olive oil and s&p in foil for them.  Here’s a before and after pic:
