    Yum!  The coconut and macadamia nut combo rocked.  But IMHO, the best part was the homemade mango salsa.  The salsa took only about 12 minutes and it was well worth it! We served them as an app, but they would be terrific as an entree with steamed rice and a healthy salad.

    Use up those fresh tomatoes from your garden with this spin on a classic.  Grilling the prosciutto is much less mess than frying up bacon and the zesty lemony mayo really brings out the flavors of the salty prosciutto and sweet tomatoes.  I could eat this sandwich every week during tomato season!

    I am trying so hard to like salmon.  It is not my favorite fish but I know it is packed with good stuff.  Honestly, I loved this salmon dish.  The hit of bbq sauce at the end was super flavorful and I made sure I got some of the corn and jalapeno salsa in every bite.  The kids loved the salmon and I served them corn on the cob on the side.  They boys were insistent on trying a bite of a jalapeno (with seeds and everything) despite my warning.  It wasn’t pretty, but maybe next time they will listen to their mom.

    I love to order gazpacho at a restaurant but I’ve become a pretty tough critic because this one is so fresh and fabulous.  Serve up gazpacho and pepper jack grillled cheese sandwiches for the adults and plain grilled cheese and fruit for the kids.  It also makes a cool summer app.

    This Penne Pasta dish is always a hit with the family. Okay, so the kids pick around the cherry tomatoes - but they eat everything else. Avocados, blue cheese, roasted cherry tomatoes, spicy chicken bites, and my personal fave…crumbled bacon!

    A recipe from Martha inspired this platter of grilled vegetables and steak with a rosemary and garlic infused olive oil and balsamic dressing for a super healthy summer supper.  The kids loved the steak (#1), red peppers (#2), and zucchini (#3) but they wanted nothing to do with the eggplant.  I remember loving eggplant parmesan as a kid but eggplant is like kryptonite to my kiddos.  Choose your favorite summer vegetables and throw this simple meal on the grill.

    My husband and I ate these salads off the same plate with a glass of wine for a perfect Sunday night date night at home.  I first ordered a Naan salad at a swanky little restaurant in Richmond.  We liked the home version even better because I didn’t skimp on the cantaloupe or prosciutto.  I also grilled the prosciutto which made it crispy like bacon.  It was definitely hearty enough for supper - yummmmm!! 


  9. Supper Tonight - Crab Cake Sandwiches with Smoky Red Pepper Sauce

    To make this recipe easy enough for a weeknight, we used the Old Bay Crab Cake seasoning packet to make the crab cakes (super simple and good).  You can find it in the spice aisle of most grocery stores.  The smoky red pepper sauce was fabulous.  We served the crab cakes on the Arnold brand sandwich thins with a peach and blueberry salad and some pretzel crisps.  My oldest son loves crab cakes but the other two opted for hot dogs. 


  10. Supper Tonight - Grilled Chicken with Homemade BBQ Sauce

    We are attempting to reduce our intake of high fructose corn syrup with this homemade bbq sauce.  Our favorite bottled bbq sauce (Sweet Baby Ray’s) is loaded with it (first ingredient - yikes) .  This homemade version was super easy and tasty.  We were having another family over for dinner so I threw a slew of chicken breasts in a dish and slobbed on some of the bbq sauce.  After letting the chicken soak it the tasty bbq sauce for about 4 hours, I grilled the chicken and corn on the cob.  Then I served them with some extra sauce on the side, our favorite slaw that I made earlier in the day, and some watermelon.  Super easy supper for 10 people (4 adults and 6 kids).
