Antipasto Kebabs

Easy, make ahead, no-cook app. We made a fresh balsamic dressing, but you can easily purchase a bottled dressing to save time.
 

INGREDIENTS

DIRECTIONS

• 4 oz mozzarella cheese (part skim), fresh
• 12 slice(s) salami, genoa
• 14 oz artichoke hearts, halved
• 1 cup(s) grape tomatoes
• 12 large kalamata olives, pitted
• 1/3 cup(s) balsamic vinegar
• 3 clove(s) garlic, crushed
• 1 tsp basil (dried)
• 1 tsp kosher salt
• 1 tbsp lemon juice (fresh)
• 2/3 cup(s) olive oil

1. Place cheese in freezer for 10 minutes. Cut into 1 inch cubes. Cut salami slices in half. Wrap salami slices around mozzarella cubes.

2. Thread cheese and salami cubes, artichokes, tomatoes and olives on skewers and place in shallow baking dish.

3. Combine balsamic vinegar, garlic, salt, basil, and lemon. Whisk. Slowly add olive oil and whisk together. Pour over skewers. Cover tightly and let chill for 4 hours.

4. Remove skewers from marinade and place on platter to serve.

Note: We used 8 inch wooden skewers.

I served these at my son's first birthday and they were a big hit. And because you make them ahead of time, they couldn't have been easier on me!
