Arugula and Bacon Quiche

Servings: 6          Prep Time: 20 minutes          Cook Time: 35 minutes
We love quiche - it's simple and sophisticated. Serve it up warm, at room temperature, or cold.
 

INGREDIENTS

DIRECTIONS

• 1 package(s) pie crusts (unroll), 9"
• 6 slice(s) bacon
• 1/2 cup(s) shallot(s)
• 8 oz arugula, chopped
• 2 tsp balsamic vinegar
• 1 cup(s) whipping cream
• 3 large egg(s)
• 1/4 cup(s) gruyere cheese, shredded

1. Preheat oven to 400 degrees. Prepare and bake pie crust according to package directions.
2. Cook bacon in med-high skillet until crisp. Remove bacon and blot off excess grease. Crumble bacon.
3. Reserve drippings in pan and add shallots. Saute for 2 minutes. Add arugula and saute about 1 minute or until just wilted. Remove from heat and toss with balsamic vinegar.
4. Mix cream and eggs. Add a little salt and pepper. Stir in cheese.
5. Assemble quiche by layering arugula mixture, bacon, then egg mixture.
6. Bake at 375 degrees for 35 minutes or until golden at edges. Let stand for 10 minutes before cutting.

Note: Cover and refrigerate any leftovers for up to 2 days.
