• 4 12" flour tortillas • 1 lb ground chicken • 1/3 cup(s) barbeque sauce • 1 tbsp balsamic vinegar • 1/2 medium lime(s) • 12 oz mozzarella cheese, sliced • 1 cup(s) tomato(es), diced • 1/2 cup(s) red onion, thinly sliced
|  | 1. Preheat broiler to high. 2. In a large skillet coated with cooking spray, brown flour tortillas on both sides. Transfer tortillas to prepared baking sheets. 3. Heat a little olive oil in large sauce pan. Add chicken and cook through. Stir in bbq sauce, balsamic vinegar, and juice from 1/2 lime. Cook for 2 minutes and remove from heat. 4. Top each tortilla with mozzarella cheese, chicken, tomato, and red onion. 5. Broil pizzas for 2 minutes, making sure they don't burn. Cut into wedges and serve. |
