Baked Asian Ginger Chicken

Servings: 4          Prep Time: 15 min. plus time to marinate          Cook Time: 1 hour
These chicken breasts are marinated and roasted in a sweet Asian inspired sauce that gives them loads of flavor.
 

INGREDIENTS

• 4 chicken breasts, bone in, skin on
• 1/3 cup(s) soy sauce
• 1/2 cup(s) honey
• 1 tbsp garlic, minced
• 2 tbsp ginger root, grated

1. Cook the soy sauce, honey, ginger, and garlic over low heat until the honey is melted.
2. Place chicken breasts, skin side down, in baking dish and pour marinade over top. Cover tightly with foil and refrigerate. Let marinate for at least 1 hour (or up to 24 hours).
3. Preheat oven to 350. Cook chicken (covered with foil) for 30 minutes. Flip chicken so it is skin-side up, raise oven temp to 375 degrees, and cook for 20 - 25 more minutes, basting occasionally. The sauce should be a dark, rich brown.

Note: You can easily peel the ginger root with the edge of a spoon or buy already minced ginger in the jar.
Suggested Side: Mashed Potatoes and Asian Salad Kit (includes greens, snap peas, cherries, won ton strips and sesame dressing).
