Baked Pecan-Crusted Chicken

Servings: 4          Prep Time: 10 minutes          Cook Time: 25 minutes
You need only a few ingredients to whip up this simple dinner. Try to use fresh parsley - it makes a big difference!
 

INGREDIENTS

DIRECTIONS

• 1 1/2 cup(s) pecans, finely chopped
• 1 1/2 tsp salt
• 2 tbsp parsley (fresh)
• 2 medium egg whites
• 4 medium chicken breast halves, boneless skinless

1. Preheat oven to 400 degrees. Lightly spray foil-lined baking sheet with cooking spray.

2. Mix pecans, salt and parsley in a shallow bowl.

3. Beat the egg whites in another shallow bowl.

4. Dredge breasts in egg whites, then pecan mixture. Bake at 400 degrees for 25 minutes.

This wasn't a huge hit at my house, but I accomplished making dinner after work and before 8 p.m. without getting seriously stressed out, so I still count it a success! My husband declared the pecan coating "interesting." He decided it still gave the chicken a nice flavor after he scraped it off. (We're kid free, but that doesn't mean there are no picky eaters here.) Thanks so much for this service.
