Barbecue Brunswick Stew

This is a very hearty variation on brunswick stew that adds the great flavor of pork barbeque (already prepared).
 

INGREDIENTS

DIRECTIONS

• 2 cup(s) chicken broth, low sodium
• 16 oz diced potatoes, drained
• 16 oz corn (frozen)
• 28 oz diced tomatoes, no salt, not drained
• 10 oz baby lima beans (frozen)
• 18 oz pork barbecue
• 1 chicken rotisserie, shredded

1. Add first five ingredients in a medium sauce pan. Simmer over medium high heat.

2. Add the pork barbecue and chicken and let simmer on low for 30 minutes or up to 2 hours. Add more chicken stock or water if needed. Season with pepper.

Note: This dish doubles and freezes well. We used Lloyd's pork BBQ.
