Barbecued Chicken and Black Bean Burritos

This quick and flavorful supper is a family favorite of one of our members. We tried it and loved it too!
 

INGREDIENTS

DIRECTIONS

• 1 tbsp olive oil
• 3 chicken breast halves, boneless skinless
• 1/2 cup(s) yellow onion, chopped
• 1 tsp garlic, minced
• 15 oz black beans (canned, no salt), drained and rinsed
• 1/3 cup(s) barbeque sauce
• 1/2 cup(s) cheddar cheese (low-fat), shredded
• 4 large tortillas
• 1/4 cup(s) sour cream, light

1. Cut chicken into bite size pieces. Heat oil in large skillet and add chicken. Cook for 2 minutes.

2. Add the onion and garlic. Cook for about 5 more minutes or until the chicken is no longer pink.

3. Add the rinsed black beans and barbecue sauce to skillet. Reduce heat and stir to coat the chicken with the barbecue sauce. Sprinkle the cheese over top and heat for 2 to 3 more minutes without stirring.

4. Heat tortillas in microwave. Spoon chicken mixture in center of tortilla. Add sour cream and roll up burrito-style.

Note: Option - Add a little white rice to your burritos.
Suggested Side:  Multi-grain tortilla chips
