• 3 chicken breast halves, boneless skinless • 1/2 bottle(s) barbeque sauce • 1/2 cup(s) frozen corn • 1/4 cup(s) red onion, finely chopped • 2 cup(s) monterey jack cheese, shredded • 1 pizza dough • 2 tbsp fresh cilantro, chopped
|  | 1. Put chicken breasts in a crock pot with a little water. Cook on high for 3 - 4 hours. Remove chicken, let cool, and shred. Mix chicken with barbeque sauce. 2. Preheat oven to 500 degrees. 3. Roll out dough on lightly floured surface. Coat dough with a little olive oil or place on lightly greased baking sheet. 4. Spread thin layer of barbeque sauce on dough. Cover with chicken. Top with frozen corn, red onion, and monterey jack cheese. Place in oven. 5. Bake for 6 - 8 minutes or until crust is golden brown. Sprinkle with cilantro, if desired. |
