• 2 beefsteak tomato • 1/4 cup(s) basil (fresh), chopped • 1/4 cup(s) provolone cheese (red-fat), diced • 1/4 cup(s) Italian bread crumbs
|  | 1. Preheat oven to 375 degrees.
2. Cut the tomatoes in half, horizontally. Hollow out the inside of the tomatoes carefully (don't puncture the outside shell), making sure to reserve the inside pulp.
3. Drain pulp. Toss with breadcrumbs, provolone cheese, and basil. Season with black pepper.
4. Prepare a baking pan by coating with cooking spray. Place tomato halves on top. Fill with bread crumb stuffing. Spray the top with cooking spray (or drizzle with olive oil).
5. Bake for 20 minutes, or until brown on top. |
