Basil Stuffed Tomatoes

INGREDIENTS

DIRECTIONS

• 2 beefsteak tomato
• 1/4 cup(s) basil (fresh), chopped
• 1/4 cup(s) provolone cheese (red-fat), diced
• 1/4 cup(s) Italian bread crumbs

1. Preheat oven to 375 degrees.

2. Cut the tomatoes in half, horizontally. Hollow out the inside of the tomatoes carefully (don't puncture the outside shell), making sure to reserve the inside pulp.

3. Drain pulp. Toss with breadcrumbs, provolone cheese, and basil. Season with black pepper.

4. Prepare a baking pan by coating with cooking spray. Place tomato halves on top. Fill with bread crumb stuffing. Spray the top with cooking spray (or drizzle with olive oil).

5. Bake for 20 minutes, or until brown on top.

The recipe tasted OK the first time, but I tried to save them as leftovers and they got incredibly soggy. Gross. Also, it is a bit awkward to work around the top of the tomato both when scooping out the pulp and eating them. I wouldn't make this again - I think I will stick to firmer vegetables like peppers or zucchini for stuffing in the future.
