Beef Tenderloin with Mushrooms

This beef tenderloin, stuffed with mushrooms and blue cheese, is more for company than a weekday family supper, but it's easy and elegant.
 

INGREDIENTS

• 1 lb mushrooms, sliced
• 1 cup(s) green onion(s), chopped
• 1/4 cup(s) butter, with salt
• 1/4 cup(s) parsley (fresh), chopped
• 6 lb beef roast tenderloin
• 4 oz blue cheese, crumbled
• 8 oz red wine vinegar and oil salad dressing

1. Saute mushrooms and green onions in butter in large skillet until tender. Drain, stir in parsley and set aside.

2. Trim excess fat from beef. Cut lengthwise to within 1/4 inch of other side. Season with salt and pepper. Spoon mushroom mixture onto meat. Sprinkle with blue cheese. Fold meat over stuffing and tie securely with heavy string at 2 inch intervals.

3. Place meat in large shallow dish and pour dressing over it. Cover and refrigerate for 8 hours, basting occasionally.

4. Remove meat from marinade. Press crushed pepper onto each side. Bake at 350 degrees for 40 - 50 minutes or until done.
