• 1 lb mushrooms, sliced • 1 cup(s) green onion(s), chopped • 1/4 cup(s) butter, with salt • 1/4 cup(s) parsley (fresh), chopped • 6 lb beef roast tenderloin • 4 oz blue cheese, crumbled • 8 oz red wine vinegar and oil salad dressing
|  | 1. Saute mushrooms and green onions in butter in large skillet until tender. Drain, stir in parsley and set aside.
2. Trim excess fat from beef. Cut lengthwise to within 1/4 inch of other side. Season with salt and pepper. Spoon mushroom mixture onto meat. Sprinkle with blue cheese. Fold meat over stuffing and tie securely with heavy string at 2 inch intervals.
3. Place meat in large shallow dish and pour dressing over it. Cover and refrigerate for 8 hours, basting occasionally.
4. Remove meat from marinade. Press crushed pepper onto each side. Bake at 350 degrees for 40 - 50 minutes or until done. |
