Beef and Rice Burritos

Servings: 4          Prep Time: 5 min.          Cook Time: 15 min.
This recipe is inexpensive, easy and always a kid pleaser. Skip the Mexican fast food run and make this one at home. To make it even healthier, try using 93% lean turkey meat (your family won't know the difference).

DIRECTIONS

• 1 lb ground beef
• 1 packet(s) taco seasoning
• 1 cup(s) white rice (instant)
• 1 cup(s) salsa
• 1 cup(s) sharp cheddar cheese, shredded
• 1/2 head iceberg lettuce, shredded
• 4 large tortillas

1. Prepare rice according to package directions (about 5 min. cook time). Set aside.
2. Cook ground beef (or ground turkey) until no longer pink. Drain fat. Add taco seasoning and about 1/2 cup of water. Add 1 cup of salsa. Let simmer for a few minutes. Add cooked rice.
3. Sprinkle cheese on tortilla. Warm in microwave. Add beef mixture and chopped lettuce. Fold over top and bottom of tortilla and roll. Wrap bottom with tin foil to hold together.
4. Serve (with sour cream if desired).

Note: Add black beans or chopped bell pepper to beef mixture if desired.
