Black Bean, Corn and Tomato Salad

• 2 lime(s)
• 2 tbsp olive oil
• 15 oz black beans
• 1 cup(s) frozen corn, thawed
• 1 plum roma tomatoes, seeded and chopped
• 1 scallion(s), minced
• 1/8 tsp crushed red pepper
• 4 leaves bibb lettuce, torn

1. Whisk together 3 tbsp lime juice, 1 tsp lime zest and olive oil. Season dressing with salt and black pepper. Set aside.
2. Combine black beans, corn, tomato, scallion, crushed red pepper and lettuce. Toss with dressing and chill for 15 minutes before serving.

Note: Cook corn on the cob for the kids and use two ears for the salad.
