Bourbon Pork Tenderloin with Scallion Mustard Sauce

Servings: 6 - 8          Prep Time: 15 min. plus 2 hours to marinate          Cook Time: 30 - 45 minutes
The pork is great with just the bourbon marinade but, if you have the time, make the delicious sauce to go with it.
 

INGREDIENTS

DIRECTIONS

• 1/4 cup(s) soy sauce, light
• 1/4 cup(s) bourbon
• 2 tbsp brown sugar
• 3 lb pork tenderloin
• 1/4 cup(s) sour cream, light
• 1/3 cup(s) mayonnaise
• 1 tbsp scallion(s), chopped
• 1 tbsp dry mustard
• 1 1/2 tbsp vinegar

1. Place first 3 ingredients in a ziploc bag. Add pork and marinate in fridge for 2 hours. Turn once.
2. Preheat oven to 325 degrees.
3. Coat a baking pan with cooking spray. Remove pork from bag and place on pan topped with some of the marinade. Bake for 30 to 45 minutes, basting with the marinade. (Option: grill pork for 20 - 30 minutes)
4. For the sauce: combine the sour cream, mayo, scallions, mustard, and vinegar. Mix and place in fridge until ready to serve.
5. Slice pork on the diagonal and serve with the sauce on top.
