• 1 1/2 cup(s) Italian bread crumbs • 1/2 cup(s) Parmigiano-Reggiano, grated • 1/4 cup(s) olive oil • 4 clove(s) garlic, finely chopped • 4 medium tenderloin steaks • 6 cup(s) arugula • 1 lemon(s)
|  | 1. Preheat broiler. 2. Mix the breadcrumbs, parsley and cheese. 3. Warm the olive oil and garlic over low heat in a skillet. Pour the oil and garlic into the breadcrumb mixture to moisten. 4. Cut meat into bite-size pieces and season with salt and pepper. Toss meat with breadcrumb mixture to coat. Spread the meat on a baking sheet and place under the broiler until the coating is crisp and the meat is tender (about 6 - 7 minutes). 5. Toss the arugula with a drizzle of extra olive oil, a few tablespoons of lemon juice, and salt and pepper to taste. Place arugula on each plate and serve meat on top. |
