Breakfast Enchiladas

Servings: 8          Prep Time: 15 min.          Cook Time: 40 min.
This make-ahead casserole is quick, easy and delicious for any meal of the day. We serve them with our favorite salsa so don't forget to make sure you have some in the fridge.
 

INGREDIENTS

• 2 cup(s) deli ham, diced
• 1/2 cup(s) green onion(s), chopped
• 10 flour tortillas
• 2 cup(s) sharp cheddar cheese, shredded
• 6 large egg(s)
• 2 cup(s) half n half
• 1/2 tsp salt
• 1/4 tsp crushed red pepper

1. Sprinkle diced ham and green onions evenly down the center of each tortilla; top each with 2 tbsp shredded cheese. Roll up tortillas and place, seam side down, in a lightly greased 9 X 13 pan.
2. Whisk eggs and next 3 ingredients in a large bowl. Pour over tortillas.
3. Cover and chill at least 8 hours. Remove from fridge and let stand 30 minutes at room temp before baking.
4. Bake, covered, at 350 degrees for 20 minutes. Uncover and bake for 15 more minutes. Sprinkle with remaining cheese and bake 3 to 4 more minutes or until cheese melts. Let stand 10 minutes before serving.
5. Serve with salsa and / or sour cream.

Note: Use non-fat half n half as a healthy alternative.
Suggested Side: steamed asparagus or fresh fruit
