• 15 oz ricotta cheese • 2 tbsp olive oil, divided • 1 tsp oregano • 1 tsp crushed red pepper • 1/2 tsp garlic salt • 2 chicken breast halves, boneless skinless • 1 cup(s) broccoli, chopped • 1 cup(s) grape tomatoes, halved • 1/2 cup(s) parmesan cheese, shaved • 1 large pizza dough
|  | 1. Preheat oven to 475 degrees. 2. Stir ricotta, 1 tbsp olive oil, 1/2 tsp oregano, 1/2 tsp red pepper flakes, and 1/2 tsp garlic salt. Set aside. 3. Cut chicken into bite sized cubes and season with remaining 1/2 tsp. oregano, and crushed red pepper. Saute in 1 tbsp olive oil over medium-high heat until browned (5 minutes). 4. Cut broccoli into small florets and add to chicken. Cook for 1 more minute until wilted. 5. Roll out pizza dough and spread on pizza pan coated with some olive oil or cooking spray. Spread ricotta mixture on top followed by the chicken and broccoli, tomatoes, and shaved parmesan. Bake for 8 - 12 minutes or until crust is golden brown. Season with some kosher salt, slice, and serve. |
