Bruschetta-Style Whole Wheat Pasta

Servings: 4          Prep Time: 10 min.          Cook Time: 15 min.
The wheat taste of the pasta tastes great with this bruschetta style tomato mixture. If you are in a rush or tomatoes are not in season, substitute a 28 oz. can of diced tomatoes (drained) for the chopped fresh tomatoes.

DIRECTIONS

• 4 tomato(es), chopped
• 2 tbsp balsamic vinegar
• 2 tbsp olive oil
• 4 clove(s) garlic, minced
• 1 lb thin spaghetti (whole wheat)
• 1/4 cup(s) basil, chopped
• 1/2 tsp oregano
• 1/4 cup(s) parmesan cheese, shaved

1. Cook pasta according to package directions.
2. Add olive oil to a pan and heat over medium. Add garlic and saute for a few minutes until lightly browned. Add tomatoes, balsamic vinegar, oregano, and basil. Heat until warmed (about 2 minutes). Season to taste with salt and pepper.
3. Serve pasta topped with tomato mixture and shaved parmesan.
