Chick Pea and Spinach Salad

If you like chick peas, this is a fabulous side dish.
 

INGREDIENTS

DIRECTIONS

• 10 oz frozen spinach, chopped
• 2 cup(s) chick peas, drained
• 1 red bell pepper, diced
• 1 tbsp chives, finely chopped
• 2 lemon(s)
• 1/4 cup(s) olive oil

1. Defrost spinach and squeeze out excess water.
2. Combine chick peas, spinach, red bell pepper, juice from 1 lemon, chives, and olive oil. Add more lemon juice to taste. Season with kosher salt and pepper.
