Chicken Parmesan

Everyone loves chicken parmesan. Make enough to serve chicken parm subs the next night.
 

INGREDIENTS

DIRECTIONS

• 4 chicken breast halves, boneless skinless
• 2 egg(s)
• 1 cup(s) Italian bread crumbs
• 2 tbsp parmesan cheese, grated
• 2 tbsp olive oil
• 1 jar pasta sauce (marinara)
• 4 slice(s) mozzarella cheese, part skim
• 1 box spaghetti, dry

1. Flatten chicken between two sheets of wax paper.

2. Combine breadcrumbs and parmesan cheese.

3. Dip chicken in beaten eggs and then dredge in breadcrumb mixture.

4. Heat oil in a skillet over med-high heat and cook cutlets until brown on each side.

5. Coat a baking dish with a little pasta sauce. Place the chicken in the dish. Place slices of mozzarella on top and then some more pasta sauce.

6. Bake at 350 degrees for 10 - 15 minutes. Serve with pasta and remaining sauce.

Note: Use fresh or box spaghetti.

This is very good, but I would recommend using chicken cutlets instead of the breast halves. It saves the pounding time, and the pieces are more manageable. They don't have to cook as long, either. Also, I used fresh mozzarella, but I think sliced packaged mozzarella or grated would have been easier.
