• 4 chicken breast halves, boneless skinless • 2 egg(s) • 1 cup(s) Italian bread crumbs • 2 tbsp parmesan cheese, grated • 2 tbsp olive oil • 1 jar pasta sauce (marinara) • 4 slice(s) mozzarella cheese, part skim • 1 box spaghetti, dry
|  | 1. Flatten chicken between two sheets of wax paper.
2. Combine breadcrumbs and parmesan cheese.
3. Dip chicken in beaten eggs and then dredge in breadcrumb mixture.
4. Heat oil in a skillet over med-high heat and cook cutlets until brown on each side.
5. Coat a baking dish with a little pasta sauce. Place the chicken in the dish. Place slices of mozzarella on top and then some more pasta sauce.
6. Bake at 350 degrees for 10 - 15 minutes. Serve with pasta and remaining sauce. |
