• 2 slice(s) bread • 4 medium chicken breast halves, boneless skinless • 2 tbsp basil • 1/4 cup(s) plain yogurt • 1 tbsp Dijon mustard • 1/2 cup(s) parmesan cheese, grated • 2 tbsp unsalted butter
|  | 1. To make fresh breadcrumbs, process slightly stale country bread in a food processor. (Make about 1 cup.) 2. Flatten chicken breast w/ meat mallet (about 1/2 inch thickness). Season with salt and pepper. 3. Sprinkle 2 teaspoons of freshly chopped basil in the center of each breast. Starting at the long side, roll each breast so that basil is in the middle. They should stay securely rolled without a toothpick or string. 4. In one shallow bowl, mix yogurt and mustard. In another, mix cheese and breadcrumbs. Roll each breast in yogurt mixture; then dredge in breadcrumbs. 5. Place on prepared baking dish and drizzle with melted butter. Cook at 400 degrees for 30 minutes. |
