• 8 oz rigatoni • 1 tbsp olive oil • 1 can(s) yellow onion, finely chopped • 1 package(s) frozen chopped spinach, 10 oz. • 3 cup(s) chicken breast halves, boneless skinless, cooked • 1 can(s) diced tomatoes w/ basil, garlic, oregano • 1 package(s) cream cheese (chives & onion), 8 oz. • 1/2 tsp salt • 1/2 tsp pepper • 1 1/2 cup(s) mozzarella cheese, shredded
|  | 1. Prepare rigatoni according to package directions. Spread oil on bottom of an 11x7-inch baking dish. Add chopped onion in a single layer. Bake at 375 for 15 minutes. Transfer onions to a large bowl. 2. Drain chopped spinach well, drying with paper towels. Stir rigatoni, spinach, chicken, and next 4 ingredients into onion bowl. Spoom mixture into baking dish and sprinkle evenly with shredded mozzarella cheese. 3. Bake covered at 375. Uncover and bake 15 more minutes or until bubbly. |
