Shhh. My kids love processed mac and cheese. The more Velveeta, the better. Occasionally, I feel guilty and whip up this batch of creamy, fabulous mac. And my kids love it!

1. Preheat oven to 400 degrees. Rub the inside of a casserole dish (2 qt) with butter or cooking spray.

2. Cook macaroni according to package directions. Drain and reserve 1 cup of pasta water.

3. Make topping by melting 1/2 sick of butter in a small saucepan. Add crackers and cook for about 5 minutes. Set aside.

4. Melt 2 T butter in a small saucepan. Whisk in flour and cook 1 minute. Whisk in milk, cream, and nutmeg and bring to a boil, stirring constantly.

5. Add cheeses, stirring until melted. If it seems too thick, add some reserved pasta water.
