• 4 tbsp unsalted butter, softened • 1 sleeve(s) saltines, low-salt • 1/2 lb macaroni noodles • 2 tbsp unsalted butter • 2 tbsp flour • 3/4 cup(s) milk • 3/4 cup(s) heavy whipping cream • 1/4 tsp nutmeg • 2 cup(s) cheddar cheese (low-fat), aged white, shredded • 4 oz cream cheese
|  | 1. Preheat oven to 400 degrees. Rub the inside of a casserole dish (2 qt) with butter or cooking spray.
2. Cook macaroni according to package directions. Drain and reserve 1 cup of pasta water.
3. Make topping by melting 1/2 sick of butter in a small saucepan. Add crackers and cook for about 5 minutes. Set aside.
4. Melt 2 T butter in a small saucepan. Whisk in flour and cook 1 minute. Whisk in milk, cream, and nutmeg and bring to a boil, stirring constantly.
5. Add cheeses, stirring until melted. If it seems too thick, add some reserved pasta water.
6.Mix with macaroni. Place in buttered dish. Add cracker topping and bake 20 minutes.
