Servings: 10 Prep Time: 10 min. Cook Time: 30 min. Looking for a Mexican appetizer other than salsa or guac - try this fun fiesta corn dip. My friend served it as a trio with some guac and pico de gallo.

INGREDIENTS		DIRECTIONS
• 1 cup(s) Mexicorn, drained • 1 cup(s) monterey jack cheese, shredded • 1 cup(s) mayonnaise, light • 1/2 cup(s) parmesan cheese, grated • 2 tbsp jalapeno peppers (canned), chopped		1. Preheat oven to 350 degrees. 2. Mix all ingredients together, spread in a greased casserole dish and bake until bubbly, about 30 minutes. 3. Scoop into a serving bowl and serve with tortilla chips.
