Green Beans with Bacon and Shallots

DIRECTIONS

• 1 lb green beans (fresh)
• 2 slice(s) bacon
• 1/4 cup(s) shallot(s), chopped
• 1 tsp lemon juice (fresh)

1. Boil water in a saucepan. Add green beans and let simmer for 5 minutes (until crisp-tender). Drain and rinse with cold water.

2. Cut bacon into pieces with scissors and cook in a pan until crisp. Remove from pan with a slotted spoon. Leave about 1 tbsp of drippings in pan.

3. Add shallots to pan and cook for 3 - 4 minutes. Add beans and lemon juice and toss. Season with salt and pepper. Cook for a few more minutes until heated through. Sprinkle with crumbled bacon bits and serve.
