• 1 cucumber(s), peeled and chopped • 1 red bell pepper, chopped • 1/2 cup(s) button mushrooms, halved • 1/2 cup(s) kalamata olives, pitted, halved • 1 cup(s) mozzarella cheese (part skim), fresh, diced • 1/2 cup(s) grape tomatoes, halved • 1/4 cup(s) balsamic vinegar • 1/4 cup(s) olive oil
|  | 1. Put mozzarella in the freezer for 5 - 10 minutes.
2. Combine chopped cucumber, chopped pepper, mushrooms, olives and tomatoes in a bowl.
3. Take mozzarella out of freezer and dice. Add to bowl of veggies.
4. Whisk together balsamic vinegar and olive oil (add a touch of honey if you like it sweeter). Season with salt and pepper. Toss with veggies. |
