• 1 tbsp vegetable oil • 1/2 cup(s) tortilla chips, crushed • 1/2 cup(s) yellow onion, chopped • 1/2 cup(s) tomato(es), diced • 2 tbsp jalapeno pepper(s), chopped • 4 large egg(s) • 4 8-inch tortillas • 1 cup(s) mexican cheese blend, shredded
|  | 1. Heat vegetable oil in skillet. Saute tortilla chips, onion, tomatoes, and jalapeno for 4 minutes.
2. Whisk together eggs. Season with salt and pepper. Add eggs to skillet and cook without stirring for 2 minutes.
3. Stir gently, breaking up eggs.
4. Serve in warm tortillas with cheese. |
