Party Sliders

Follow this recipe, and you've got a slider, baby! Cooking the burger meat in a rimmed cookie sheet gives you a nice flat slider (and enough to feed a crowd).

DIRECTIONS

• 3 lb ground beef, 95% lean
• 2 tbsp steak seasoning (Montreal)
• 12 slice(s) cheddar cheese (low-fat), sliced
• 1/3 cup(s) ketchup, low sod.
• 1/3 cup(s) yellow mustard
• 24 dill pickle chips
• 24 party rolls (Potato or Pepp. Farm)

1. Mix ground meat with steak seasoning.

2. Flatten out in a rimmed baking sheet. Score meat with a pizza cutter into about 24 squares (about 2X2 inch).

3. Cook meat for 10 minutes at 350 degrees.

4. Remove from oven. Drain fat. Cut completely through meat with a knife and place cheese on top of squares. Place back in the oven for 1 more minute or until cheese melts.

5. Serve on party rolls (we used Martin's potato party rolls) with ketchup, mustard and pickle chips.

Note: We used 90/10 ground meat but 80/20 would work too.

I like to add finely diced sweet onions (or sprinkle dried onions -no need to rehydrate) under the meat. I also don't bother to score the meat- I place the cheese on top and melt it, then place the top half of the buns on top of the meat (I only cut the buns in half not into individual buns). I then cut them into pieces that will fit onto my spatula and then once on top the bottoms they are cut into individual burgers. I hope that makes sense.

Dress it up with roasted red pepper mayonnaise, x-sharp cheddar, a roasted grape tomato and a piece of peppery arugula...a little caterer's secret!

This recipe is for tiny burgers, so the Martin's sandwich rolls (not the hamburger buns) are used - they're already slider size, so no need to cut up buns as the previous poster does. Also, scoring the meat beforehand gives a nice, slider-sized patty without having to cut through whole burgers afterwards. Pepperidge Farm also makes slider buns - look for the words "perfect for sliders" on the package.

This is such a great recipe! I fixed this for my daughter's first birthday and everybody loved the idea and thought they were the best burgers...even my 1 year old enjoyed it. We added some powdered ranch dressing mix to the meat for an added taste.
