Picadillo Tacos

Spicy and spectacular! We used a chipotle pepper in adobo sauce instead of a jalapeno pepper. Either one will give this dish kick.

DIRECTIONS

• 1 lb ground beef, 95% lean
• 2 medium carrots, diced
• 1 medium yellow onion, diced
• 1 large tomato(es), diced
• 1 medium jalapeno pepper(s), seeded and chopped
• 4 8-inch tortillas

1. Cook ground beef (95% lean!), crumbling with spoon until brown.

2. Stir in carrots and onion.

3. Add tomatoes and jalapeno pepper. Cook for 4 minutes.

4. Serve in warm tortillas. Optional: Garnish with crumbled queso fresco and fresh cilantro.
