Raspberry and Hazelnut Bars

The hazelnuts make this recipe a winner. You can assemble this dessert quickly too. Great take-a-long for a Christmas office party.

• 13 oz unsalted butter, softened
• 1 2/3 cup(s) sugar
• 2 large egg(s)
• 3 1/2 cup(s) flour
• 1 1/4 cup(s) hazelnuts (shelled), toasted
• 2 cup(s) raspberry preserves

1. Heat oven to 350 degrees.
2. Cream butter and sugar until fluffy. Add eggs, one at time. Add flour and mix until blended. Chop toasted hazelnuts and add to bowl. Mix again.
3. Press about 2/3 of mixture into a 9X13 inch baking pan sprayed with cooking spray. Spread raspberry preserves on top and then crumble remaining mixture on top. Bake for about 55 min - 1 hour or until browned.
4. Let cool and cut into 2 inch squares.
