Roasted Potatoes

Servings: 4          Prep Time: 10 min.          Cook Time: 25 min.
Fresh rosemary is the key ingredient in this classic potato side dish. It tastes great with or without the onions.
 

INGREDIENTS

DIRECTIONS

• 1 1/2 lb red potatoes
• 2 tbsp butter, with salt
• 2 tbsp olive oil
• 1 small red onion, coarsely chopped
• 2 tbsp rosemary (fresh), chopped

1. Preheat oven to 450 degrees. Peel and quarter the potatoes and then rinse them well. Pat them thoroughly dry with paper towels before cooking.

2. Place butter and oil in a roasting pan and place in the oven. When the butter has melted, add the potatoes, red onions, and rosemary. Toss well and then spread out in one layer.

3. Roast in the oven for about 25 minutes or until the potatoes are golden brown and tender. Turn the potatoes during cooking (when one side is brown).

4. After they are cooked, season with salt and pepper.

Note: Use small firm potatoes and remember to vary cook time based on the size of the potatoes.
