Using turkey sausage and only 2 layers of lasagna noodles lightens up this dish. Before assembling the lasagna, soak the noodles in hot water for 20 minutes instead of cooking them.

1. Soak noodles in your lasagna dish filled with very hot tap water for 20 minutes. Drain and dry out dish.

2. While noodles are soaking, heat olive oil in a skillet and add sausage (casings removed). Cook sausage while breaking it up with a wooden spoon or fork until browned, about 10 minutes.

3. Mix ricotta cheese, mozzarella, 3/4 cup parmesan cheese, beaten egg, and Italian seasoning.

4. Pour a thin layer of sauce in bottom of lasagna dish. Combine the rest of the jar of sauce with the sausage.

5. Layer pasta, half of the ricotta and half of the sausage. Repeat layers and sprinkle the top layer of sausage with the remaining 1/4 cup of parmesan cheese.

6. Bake for 25 - 30 minutes at 375 degrees or until the sauce is bubbling.
