Spinach Salad

Great way to use up some extra hard boiled eggs and leftover bacon from breakfast.
 

INGREDIENTS

• 2 egg(s)
• 1/4 cup(s) sugar
• 1/4 cup(s) cider vinegar
• 1/2 cup(s) vegetable oil
• 1 tsp dry mustard
• 5 oz baby spinach
• 4 green onion(s), thinly sliced
• 4 slice(s) bacon, cooked

1. Place 2 eggs in small sauce pan. Cover with water. Let boil, then cover pan with lid. Remove from heat and let stand for 15 minutes. Place in cool water to stop cooking. Let cool.

2. For the dressing: combine the sugar, vinegar, oil, and dry mustard. Season with salt and pepper.

3. Combine baby spinach leaves, green onion, chopped eggs, and crumbled bacon. Toss with dressing and serve.
