Sweet Potato Skins

These twice baked sweet potatoes would make a great appetizer or side dish.
 

INGREDIENTS

DIRECTIONS

• 4 sweet potatoes
• 1/4 cup(s) buttermilk, low-fat, warmed
• 4 slice(s) bacon, cooked and chopped
• 2 green onion(s), thinly sliced

1. Preheat oven to 450 degrees. Bake sweet potatoes for 40 - 45 minutes. Let cool.

2. Halve sweet potatoes and scoop out 1/3 of the flesh. Combine flesh with buttermilk and mash.

3. Arrange skins on a baking sheet. Add filling. Bake until browned, about 15 more minutes.

4. Sprinkle with bacon pieces and green onion and serve.

Note: For extra flavor, season with kosher salt, pepper and paprika.
