• 8 oz rotini, dry • 1 lime(s) • 1 tbsp white wine vinegar • 1 tsp oregano • 1 tsp cumin • 1/4 tsp cayenne pepper • 1/4 cup(s) olive oil • 1 cup(s) corn (frozen), thawed • 2 red bell pepper, diced • 1 bunch(es) scallion(s), sliced • 2 clove(s) garlic, crushed • 1 avocado, diced
|  | 1. Prepare pasta according to package directions. Set aside.
2. Whisk together juice from one lime, vinegar, oregano, cumin, cayenne, and olive oil.
3. Toss together corn, bell peppers, scallions, garlic, pasta, and vinaigrette.
4. Stir in avocados right before serving. Season with salt and pepper. |
