Thai Beef with Chiles

There was a request in my house for more Thai food. Viola! This reasonably simple Thai Beef is sure to please.
 

INGREDIENTS

• 1 cup(s) jasmine rice
• 1 can(s) coconut milk, 14 oz.
• 2 1/2 tbsp fish sauce
• 2 1/2 tbsp soy sauce, low sodium
• 1 tsp sugar
• 1 tbsp vegetable oil
• 3 clove(s) garlic, chopped
• 3 jalapeno pepper(s), sliced
• 1 1/4 lb beef sirloin, ground
• 1 cup(s) basil, loosely packed

1. In medium saucepan, combine rice, milk, and 3/4 c water. Season with salt. Cover and bring to a boil. Reduce to simmer and cook for 25 minutes or until rice is tender.

2. Combine fish sauce, soy sauce and sugar in a small bowl. Set aside.

3. Heat oil in skillet over high heat. Add garlic and chiles (jalapenos) and cook for 15 seconds.

4. Add beef and cook until brown, breaking up with wooden spoon. Add soy mixture. Stir for 30 seconds. Add basil and serve over rice.
