The preparation of a fabulous grilled steak is simple so it's all about the quality of the meat. Choose porterhouse or strip steaks for this recipe.

DIRECTIONS

• 2 lb porterhouse steak
• 2 clove(s) garlic, finely chopped
• 1 tbsp rosemary (fresh), chopped
• 6 leaves sage (fresh)

1. Preheat the grill over high heat. Brush with oil when ready to cook.

2. Season the steak with kosher salt and pepper. Grill for 10 - 14 minutes per side for 1 1/2 to 2 inch thick steaks.

3. Meanwhile, on the serving platter, scatter the garlic, rosemary and sage leaves. Arrange the grilled steak on top and pour good olive oil over the top. Turn the steak a few times to coat. Let it sit in the oil and herbs for 3 or 4 minutes.

4. Cut the steak off the bone and slice into 1/4 inch thick slices. Baste the meat with the oil and juices and serve.

This is traditional Tuscan Steak. I order it in Florence, Italy when I go. Just be sure to get your grill really hot so that the outside gets almost black, but keep the inside mid-rare. Absolute perfection! Great recipe...easy too!
