Twice Baked Potatoes

We love these potatoes because you prepare them ahead and throw them in the oven right before dinner.
 

INGREDIENTS

• 4 baking potatoes
• 8 slice(s) bacon
• 3/4 cup(s) sour cream, light
• 1/2 cup(s) milk
• 1/2 cup(s) cheddar cheese (low-fat), shredded
• 3 tbsp butter, with salt, softened
• 8 green onion(s), thinly sliced

1. Pierce potatoes with a fork and cook potatoes at 350 degrees for 1 hour. Let cool for 10 minutes.

2. Cook bacon and crumble into pieces.

2. Slice cooked potatoes in half lengthwise. Remove pulp, leaving 1/4 inch of potato in the shell (this will keep the skin from falling apart). Place shells on baking sheet.

3. Beat potato pulp with warmed milk (start with 1/4 cup and add more if needed), sour cream, butter and cheddar cheese. Scoop into potato shells. Top with bacon pieces and green onion. Set aside until ready to bake.

4. Bake for 15 more minutes. Serve hot.
